1 1/2 lb beef stew meat, cut into pieces8 cups water1/4 cup pearl barley3 turnips, sliced3 carrots, sliced1 potato, peeled and cubed2 leeks, trimmed and sliced1 medium onion, chopped fine1 cup cabbage, chopped finePinch of thymeSalt & pepper to taste
Trim any fat off the meat and put it in a large soup pot. Cover with water and bring to a boil. Skim off the fat, and add the barley. Cover and let simmer for 1 hour. Add turnips, carrots, potato, leeks, and onion and simmer for an additional hour. Add the cabbage and season to taste with salt, pepper, and thyme. Simmer for an additional 15 minutes and serve.
