Dan's Shepherd's Pie with Omega-3s

1 package (1.25 lb) ground turkey1 medium red onion, diced1 cup celery, diced3 tablespoons whole-grain flour2 cups low-sodium chicken broth or bouillon1 10-ounce package mixed vegetables (corn, carrots, green beans)4 medium potatoes (about 1 pound)1/3 cup soy milk2 tablespoons Smart Balance Plus buttery spreadBlack pepper to taste
Start 1.5 quarts of water boiling to cook the potatoes. Slice the potatoes into smallish (1-inch) chunks and let them cook while you prepare the meat mixture.
Preheat oven to 325 degrees F.
Brown the ground turkey. Add the onion and cook until onion softens (but does not become transparent). Add the mixed vegetables and flour, stir, then add the broth and stir again. Cook over medium heat until completely heated through.
Spoon the meat mixture into a 3-quart casserole. By now the potatoes will be mashable. Drain the potatoes and add the soy milk and Smart Balance. Spoon the potatoes over the meat mixture and place in the preheated oven. Cook for 10 - 15 minutes until the top of the potatoes becomes golden brown.
Makes about six, 1-1/2 cup servings of 365 calories apiece. If you use 1 cup servings, enter .667 servings into your nutritional planner.
