Chicken with Dijon & Apricot Sauce

1 tbsp Olive Oil˝ cup Onions, raw, chopped 1 tbsp Minced Garlic˝ cup Chicken Broth 2 tbsp Dijon Mustard1 tsp Curry powder˝ cup Low Sugar Apricot Preserve ˝ cup Plain Nonfat Yogurt, (used Weight Watchers)16 oz Chicken Tenderloins (approx 10 - 12 pcs)
Heat oil in medium-heat skillet and sauté chicken until browned; about 3 minutes per side. Remove chicken from pan and set aside. Lower heat on skillet; add onions and garlic and sauté until soft. Add 1-2 tablespoons of chicken broth if necessary to keep it moist. Blend together in a small bowl curry powder, Dijon mustard, apricot preserve and remaining broth then pour into skillet. Cook for 10 minutes over low heat stirring occasionally to help blend in bottom sediment. Return chicken with juices to skillet stirring gently to coat chicken. Cover and simmer very low for 8 to 10 minutes, careful not to scorch should liquid thicken too much. Add in yogurt, at room temperature, heat thoroughly and serve over rice* or noodles* (*not included in calorie count).
