Chicken Tomatillo Soup

1 lb boneless chicken breast1 onion, chopped3 cloves garlic, minced1 lb chopped tomatillos2 jalapeno peppers, seeded and minced4 C chicken stock1 C frozen corn kernels1 can black beans1 C hominy2 T chopped fresh cilantro1/4 C fatfree sour creamsalt and pepper to tastehot sauce to taste
makes 8 servings.
Spray large saucepan with pam, cook chicken breast till just done and browned. remove from pan, set aside.
Respray pan if necessary, add onions and garlic. Saute till golden, then add tomatillos and jalapeno. stir to saute slightly, then pour in stock. Bring to boil, simmer 10-15 minutes.
Puree in a processor or with a hand blender, then add beans, corn, hominy. Slice chicken breast and add to soup.
Stir in minced cilantro, taste and season.
Serve with a dollop of fatfree sour cream on top, with tortillas on the side if desired.
