Artisan Green Olive Rosemary Thyme bread

6.5 C AP flour3 C lukewarm water1.5 Tbsp yeast1.5 Tbsp kosher salt1 Tbsp Rosemary0.5 Tbsp Thyme1/2 C chopped green olives
Mix yeast, water, salt, rosemary, thyme until blended. Add flour. Stir with spoon until all flour incorporated. Let sit on counter in a covered (not airtight) container for 2-5 hours. Refridgerate up to 14 days. To make loaf, dust top of dough and cut off grapefruit sized piece. Flour work surface and quickly flatten out to about 1/2 inch thick. Spread chopped olives to cover top. Roll up jelly-roll style, pull sides around to bottom and shape into ball (boule). Rest on cornmeal covered peel for 40 min. Preheat oven to 450 degrees. Place stone on center rack. Place metal roaster below stone. After 20 min oven is preheated enough even if not at 450 yet. Slide loaf onto stone, pour a cup of hot water into broiler underneath and shut door quickly to capture steam. Cook 25-30 min until crust is dark and loaf sounds hollow when you thump the bottom. Serve with Laughing Cow Spreadable Cheese! 2 points/slice with cheese = 3 points per slice.
