Pumpkin Muffins

3 cups all-purpose white flour1 cup brown sugar (not packed)1 cup granulated sugar1 tsp baking soda1 tsp salt1 tbsp all-spice1 tbsp cinnamon1 tbsp nutmegCinnamon, ground, 1 tbsp (remove) Nutmeg, ground, .5 tbsp (remove)2 eggs1/4 cup canola oil15 oz canned pumpkin1/2 cup raisins (optional)
Preheat oven to 350 degrees F (175 degrees C). Grease 18 muffin cups or line with paper muffin liners.
In a large bowl, stir together all of the dry ingredients. In a separate bowl, beat the eggs and stir in pumpkin, oil, and eggs.
Stir pumpkin mixture into flour mixture until smooth. Add raisins if desired. Scoop batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.
Makes 18 muffins.
