Pumpkin Souffle

Two cups of canned pumpkin2 tablespoons of skim, evaporated milkHalf a cup of egg Beaters1 teaspoon nutmeg1 teaspoon cinnamonA pinch of ginger if you like it spicier
Makes 4-6 half cup ramekin servings.
Mix up the ingredients until smooth.
Spoon mixture into 4 ramekins or 4-6 sections of a greased muffin tin.
Place ramekins in a bain marie, which is a baking dish that is half filled with water. Make sure that the water is not too high so it touches the lip of your ramekins.
Bake at 350 degrees F for 15-18 minutes, until the souffles have risen about 1/2 an inch above the lip of the ramekin.
Serve immediately.
