Low Fat Pumpkin Oatmeal Cookies

1 Cup Pumpkin2 Egg Whites1 Cup packed Brown Sugar1 Cup Whole Wheat Flour1/2 Cup White Flour1 tsp Baking Soda1 tsp Cinnamon1/2 tsp Nutmeg1/2 tsp Ground Cloves3 Cups Quick Rolled Oats1 Cup Raisins
In a large bowl, combine pumpkin and egg whites.
In a separate bowl, combine sugar, flour (s) , baking soda, cinnamon, nutmeg, cloves oats and raisins. stir well.
Add dry ingredients to pumpkin mixture, and mix until moistened. (it will seem quite dry...NO WORRIES!)
Drop cookies by large teaspoonfuls onto baking sheet about 2" apart. You may leave them in ball form, or flatten with bottom of a glass.
Bake at 350 degress F for 10-15 minutes...you know your oven best!
Makes 56 cookies!
