Oatmeal Pumpkin Chocoalte Chip Cookies

3 cups oatmeal (not quick)1/2 Cup flour (white or whole wheat)1/2 tsp baking soda1/2 tsp baking powderPinch of salt1/2 tbsp cinnamonpinch nutmeg1/2 cup brown sugar packed1/3 cup margarine (earth balance used here)1/3 cup unsweetened apple sauce1/3 cup pumpkin puree1 tbsp honey1/4 cup mini dark chocolate chips1/4 cup soy milk
Mix dry and wet ingredients separately. Leave out chocolate chips.
Add wet to dry and combine.
Add chocolate chips.
Cover and refrigerate for minimum 2 hours so the oats absorb the liquid. Ok to refrigerate overnight.
Spoon onto a cookie sheet and top if desired (ie with seeds and nuts).
Bake at 375 for 13 minutes and enjoy! Makes approx 3 dozen cookies.
