Reuben Casserole (Low Carb)

3 lbs Steamed Cauliflower3 lbs corned beef shredded into 1/2" pieces2 lbs Sauerkraut1 lbs swiss cheese (shredded or slices)1 Pint Heavy Whipping Cream4 Tbsp Non-Salted Butter2 Tbsp Ground Mustard PowderCaraway Seed (if desired)
NOTE: Prep time does not include making your own corned beef brisket
1. Heat oven to 350 degrees. Spray 9x14 inch glass baking dish with cooking spray.
2. Steam cauliflower, then add butter. Once butter is melted, add heavy whipping cream and "mash" (a food processor works great. It should be the consistency of mashed potatoes (which is what it is taking the place of)
3. Spread 1/2 of the cauliflower in baking dish. Top with 1/2 the corned beef. Spread 1/2 the sauerkraut over corned beef. Spoon remaining cauliflower over top; spread gently. Spread remaining corned beef, then remaining sauerkraut, finally the remaining swiss cheese. Add caraway seed if desired.
4. Bake uncovered for 25-30 minutes.
