1 spray cooking spray2 lb lean beef round, well trimmed (use boneless bottom round rump roast)1/2 tsp black pepper1/2 tsp table salt2 medium onions, sliced1 3/4 cup(s) water1 packet onion soup mix1 1/2 Tbsp balsamic vinegar1 tsp dried thyme4 medium uncooked red potatoes, scrubbed and quartered1 pound baby carrots
Brown roast on all sides, put into crock pot, cook on low for 8-10 hours.
