Spinach Barley Soup with Lentils

Ingredients
* Lentils, 1 cup * Spinach, frozen, 16 oz package * Onions, raw, 1 cup, chopped * Olive Oil, 1 tbsp * Barley, pearled, raw, 0.5 cup * Chickpeas, 15 oz can * Pinto Beans, 15 oz can * Chicken Broth, 4 cupsAdditional sauteed onions and garlicJuice of one lime
Directions
Saute onions in oil until caramelized. Add all other ingredients and bring to a boil. Reduce to a simmer and cook for 2-3 hours. Add water as needed. When done add lime juice. Serve with additional caramelized onions and garlic.

    I used veggie broth instead of chicken broth and turnip greens instead of spinach. Had to add about 3 cups of water. I topped it with greek yogurt and a squirt of lime, very good! - 5/19/10
