Chicken and Barley Soup

2 carrots, diced1 celery stalk, diced1 medium-small onion, diced2 tsp. minced garlic1/2 tsp. each dried basil and oregano1/2 tsp. paprika6 cups chicken broth5 ounces cooked diced chicken breast3/4 cup uncooked barley1 tsp. canola oil
In a large dutch oven, sweat the vegetables and garlic in the oil for a few minutes, until the garlic is fragrant and golden and the onions are translucent.
Add the herbs and paprika, saute another 30 seconds, then add the chicken broth and barley. Cover. Bring the broth to a boil, then simmer for 15 minutes.
Add the chicken and simmer 10 minutes more, or until the barley is fully cooked.
Garnish with a little extra paprika and a splash of lemon juice, if desired.
Makes 4, 1 1/2 - 2 cup servings
