Pumpkin Oat Bran Muffins

Oat Bran, 2 cup Brown Sugar, .25 cup, packed Baking Powder, 2 tsp Salt, .5 tsp Pumpkin Pie spice, 1.5 tbspMilk, 2%, 1 cup egg white, fresh, 2 large, lightly beatenHoney, .25 cup Canola Oil, 2 tbsp Pumpkin, canned, without salt, 1 cup
Preheat oven to 425 F
Prep 12 muffin cups
In meduim bowl, combine dry ingredients. In a larger bowl, combine wet ingredients. Slowly add dry ingredients to wet and stir until just moistened.
Fill muffin cups 3/4 full.
Bake for 17-20 minutes.
Makes 12 large muffins or 48 mini muffins. Adjust bake time for mini muffins to approximately 12 minutes.
