Pumpkin and Black Bean Chili

Ingredients
1 medium onion, chopped1 yellow pepper, chopped1 c. fire roasted red peppers, chopped4 c vegetable broth4 c black beans, cooked and drained1 can pumpkin, no salt2 tsp chili powder1 tsp cumin1 tbsp parsley
Directions
Saute onions and yellow pepper.

In crock pot, combine all ingredients.

Cook on low for 4-5 hours, until heated throughout. Enjoy!

Makes 10 servings.
