Baked Fish with vegetables (196 cal)

Ingredients
1 large onion julienned1/2 red bell pepper, julienned1/2 green bell pepper, julienned1 small yellow squash, julienned1 small zucchini, julienned1 cup fresh sliced mushrooms2 clove of garlic, thinly sliced4-5 pods of fresh okra sliced thickly (optional)2 red snapper filets1-2 teaspoons lime juiceTony Chachere's Seasoning1 teaspoon olive oil2 tablespoons buttersalt to tastefreshly ground black pepper to taste
Directions
Drizzle olive oil in a 9" square baking dish. Sprinkle half of vegetables in bottom of pan.

Wash and clean fish filets. Sprinkle lime juice over filets and season each side with Tony Chachere's lite seasoning. Lay fish on vegetables. Place remaining vegetables over fish to cover. Sprinkle salt and freshly ground black pepper over all. Dot with butter pieces.

Bake in a 350 degree pre-heated oven for approximately 30 minutes, or until fish flakes and vegetables are tender.

Remove from oven and cover pan with aluminum foil and let stand for 5-10 minutes. Vegetables will finish steam cooking.

Serve over brown rice with green beans for a healthy, nutrious, delicious and filling meal.

    Very easy and tasty. Had to increase cooking temp to 375 for 40mins. due to high altitude. Used Tilapia fillets instead of Red Snapper. Very good. - 7/11/10
