Irish Stew

Ingredients
2 Cups Diced Potatoes2 Cups Diced Onion2 Cups Diced Carrots6 oz Canadian Bacon Diced1 Cup Fat Free Half and Half1 Cup Nonfat Milk1/2 Cup Lowfat Cheddar Cheese2 Tsp MargarineSalt and Pepper to Taste
Directions
Combine potatoes, onions, carrots, margarine, canadian bacon, and half and half in a large pot, bring to a boil and then reduce heat to simmer. Allow to simmer 45 minutes. Add milk and allow to simmer 30 minutes. Add cheese and allow to simmer 15 minutes. Serve!!
