Cream of Celery soup

Ingredients

4 cups chopped celery2 medium potatoes3 tbs butter1 lg onion3 cloves garlic6 cups chicken stock1 tsp. dried thymesalt & pepper to taste
Chop the onion and garlic.
Saute the onion and garlic in the butter until onion is transluscent.
Add the chopped celery and saute another few minutes.
Dice and add the potatoe.
Add the dried thyme and stock, simmer until tender.
Puree in batches using a blender.
Season with salt and pepper to taste.
