Brummel & Brown, Original - 1 TbspGarlic -1 clove mincedOnions -1 cup, chopped Whole Wheat Flour - 1.5 TbspHunt's Diced Fire Roasted Tomatoes with Garlic - 14.5oz canVegetable Broth - 1 cupCrushed Red Pepper Flakes - tspParsley - 1 tspSalt & Pepper - to tasteLaughing Cow Light - 1 wedge
1. Melt Brummel & Brown in a small pot and onion, once onion starts to soften, add garlic and allow to cook for about a minute. Reduce heat to medium low and allow onions to turn golden brown. Sprinkle flour over onions and garlic, stir to combine well.
2. Add the tomatoes, crushed red pepper flakes, parsley and vegetable broth. Bring to a boil. Adjust the heat and simmer for 15-20 minutes.
3. Remove soup from heat and carefully puree in a blender in small batches being sure to hold a towel over the lid of the blender. Once finished add soup back to pot.
4. Add Laughing Cow wedge and continue to cook until melted and combined, then serve.
