Chilled Southwest Rice Salad

Ingredients
* *Brown Rice, long grain, 6 cup (remove) * Chicken Breast, no skin, 8 ounces (remove) * Green Peppers (bell peppers), 0.75 cup, chopped (remove) * Yellow Peppers (bell peppers), .75 pepper, large (3-3/4" long, 3" dia) (remove) * Beans, black, 1 cup (remove) * Yellow Sweet Corn, Canned, 1 can (12 oz) yields (remove) * Cilantro, raw, 3 tbsp (remove) * Red Ripe Tomatoes, 1 large whole (3" dia) (remove) * Onions, raw, 1 cup, chopped (remove) * *Canola Oil, 1 tbsp (remove)* Mexican Seasoning - any kind - 1.5 TBSP
Directions
- Cook rice with one bunch of fresh cilantro, mexican seasoning and olive or canola oil

- While rice is steaming cook chicken and dice veggies

- Mix all ingredients together in mixing bowl and refridgerate for a few hours.
