Thyme Roasted Sweet Potatoes

Ingredients
4 Medium size Sweet Potatoes, peeled and sliced into 1/2 inch rounds3 Tablespoons Olive Oil4 Large Cloves of garlic, minced3 teaspoons of fresh Thyme Leaves1/2 teaspoon Kosher Salt1/2 teaspoon Red Pepper Flakes
Directions
Preheata oven to 450 degrees.

In a large mixing bowl, combine all ingredients and toss to coat potatoes evenly.

Arrange potato slices in a single layer on a heavyweight rimmed baking sheet or in a 13x9 inch baking dish.

Place on the top rack of oven and roast until tender and slightly browned. About 40 minutes

Serve warm or at room temperature.
