Tuna Steaks with Peppers

Ingredients
2 tuna steaks (3-4 ozs. each)1/4-1/2 c. thinly sliced red sweet pepper1/4-1/2 c. thinly sliced orange or yellow pepper1/4 c. thinly sliced red onion1/4 c. chopped fresh cilantroEmeril's Essence (spice mixture)3 T. olive oil, dividedJuice from one lemon2 T. white wine
Directions
Thinly slice the peppers and onion. Heat a fry pan with half the olive oil. Saute peppers and onion until just tender. Add the lemon juice, wine and cilantro and simmer until liquid has reduced and nearly evaporated. Set aside and keep warm.

Liberally coat both sides of the tuna with Emeri'ls Essence. Heat a non-stick fry pan with remaining oil. Saute tuna on one side for a couple minutes then turn. Cook until medium rare. The center will still be very pink but the outer edges will be white.

Place steaks on a platter and top with the pepper and onion mixture.

    This was very good, although next time I'm going to reduce the amount of lemon juice and seasoning used. It was a bit too tart for our tastes, but we liked the blend of peppers, onions, and fish. - 12/2/07

    I reduced the olive oil to 2 teaspoons, and omitted the wine (because I had none on hand) and it was still delicious. - 11/10/07
