Neat Balls - Bean Based

Ingredients
1 package frozen chopped spinach, thawed and squeezed dry1 and 1/2 C cannellini beans (or 1 can), cooked, rinsed and drained well1/2 C grated parmesan cheese1/4 C flax meal2 - 3 T butter, melted1 egg, slightly beatenGarlic (crushed cloves or powder) to taste - I used at least 2 t of powderOregano to taste (2 - 3 t)
Directions
Coursely pulse rinsed, drained beans, flax meal, parmesan and spices in blender. Stir in the melted butter and egg.

Roll into walnut size balls. Freeze. Bake as many as needed on a cookie sheet at 350 for about 30 minutes (until golden brown and crispy on the outside).

Makes about 24 - 28 small meatballs.
