Mashed Cauliflower with Roasted Garlic

1 large head cauliflower2 tbs butter7 cloves PRE-ROASTED garlic1 small onion 1 tsp olive oil (you can substitute butter)2 tbs fat free milk
Cut cauliflower into pieces and steam. Meanwhile in another pan, saute onion When cauliflower is soft , add to onion. Stir. Place in food processor with 2 tbs butter, 2 tbs fat fre milk and 7 cloves roasted garlic.
(I use this recipe for leftover roasted garlic.), and white pepper to taste. Blend and serve. Yummy!
Makes approximately 4.25 - 1 cup servings.
