Corn Fritters

Ingredients
1/2 c. all-purpose flour3/4 tsp. baking powder1/4 tsp. salt2 tsp. granulated sugar1 egg1/4 c. water or milk1 tbsp. cooking oil1 c. fresh or canned, whole kernel corn
Directions
Combine dry ingredients and mix well. Combine remaining ingredients and blend into dry ingredients without overmixing. Drop by 1/4 cupfuls into preheated 375 degree F. vegetable shortening. Fry until golden brown, turning once. Place on paper lined baking sheet in warm oven until all are cooked. Serve with maple syrup. Yield: about 6 (4 inch) fritters.

    Super Easy. Left sugar out and used whole wheat flour and rice bran oil and they were a big hit with the picky man of mine :) will add some cilantro, peppers, and black beans next time with a sour cream and lime dip. Feel inspired :) - 2/18/15
