Ratatouille in Pie Crust

Feta Cheese, Pie Crust, Red Peppers, Mushrooms, Garlic, Olive Oil, Eggplant, Onion
1. Preheat oven to 350 degrees
2. Chop up all the vegetables and garlic on a cooking sheet(s). Coat with olive oil. Baked for 45 minutes.
3. Rub pie crust with the now roasted garlic and place the vegetables in the pie crust and sprinkle feta cheese over the top (or mix together).
4. Baked another 45 minutes and enjoy!
