* 6 Chicken thighs, boneless and skinless (approx 1.5 lbs) * 1 medium Onion, sliced, * 1 cup, Fresh mushrooms, sliced * 0.25 cup Olive oil * 1.5 cup Chicken broth * 0.25 cup All-purpose flour * 2 tbsp Lemon juice * 2 tbsp Balsamic vinegar, * 1.5 tsp Salt * 0.25 tsp Black pepper
Preheat oven to 450 degrees. Pour oil into large roasting pan. Add chicken, onion, and mushrooms, turning to coat with oil. Bake for 10 mins, uncovered. Meanwhile, whisk flour into chicken broth. Then add vinegar, lemon juice, salt and pepper. Stir well. When chicken has baked for 10 mins, add the broth mixture and cover with foil. Bake until chicken is done and the gravy mixture has begun to thicken (approx 10-15 mins depending on the size of the cutlets). Let stand after stirring vegetables and spooning gravy over the chicken. Serve and enjoy!
