1 cup all purpose flour1 tsp baking powder1/2 tsp baking soda1/2 tsp cinnamon1/8 tsp salt2 TBS Canola1/4 cup unsweetened apple sauce1/2 cup Stevia (zero cal sweetener)1/2 cup light brown sugar1/4 cup egg substitute1 tsp vanilla1 1/2 cup rolled oats1/2 cup dried SunMaid Apricots
Makes 36 cookies.
a) Preheat oven to 350 degrees F. Lightly spray cookie sheet with cooking spray or use silicone baking sheet.
b) In a medium bowl, mix flour, baking powder, baking soda, cinnamon and salt.
c) In a larger, separate bowl, whisk together the Canola, apple sauce, granulated and brown sugars, egg substitute, and vanilla.
d) Add the flour mixture to the canola/egg mixture and mix well.
e) Fold in oats and apricots. Drop rounded tablespoons onto cookie sheet two inches apart.
f) Bake for 10 to 12 minutes. Remove from oven and place on cooling rack. Makes 36 cookies.
