Gluten free banana peanut butter pancakes

Ingredients
Ingredients:1 cup sorghum flour1/4 cup tapioca flour4 tbsp vegan granulated sugar1/2 tsp xanthan gum2 tsp baking powder1/2 tsp saltabout 1 1/2 cups non-dairy milk1 tbsp olive oil1/2 cup creamy peanut butter1 medium sized banana- thinly sliced3/4 cup raw shredded (unsweetened) coconut1 tbsp vinegarvegan margarine for cooking
Directions
Mix all dry ingredients, then add in all wet ingredients. Mix well. Add in banana and coconut. Then, add more milk or water to get to the consistency you are looking for.

Add some cooking spray or other fat to the griddle and cook until done. These do take a while to get done because they are ERY puffy. So be patient. It's worth it.
