Simple Chicken & Pea Soup

Ingredients
1 Chicken breast, sliced into small pieces1 Onion, finely chopped2 Chicken stock cubes1 cup of frozen peas1/4 cup brown riceApprox 500ml boiling water5 sprays Fry Light
Directions
Chop chicken & onion.
Spray a large saucepan with Fry Light
Fry the chicken & onion until cooked
Add stock cubes & water & stir until stock has dissolved
Add rice & stir thoroughly
Leave to simmer for approx 30 mins
Add peas & simmer until peas are soft & rice is thoroughly cooked (approx another 10 mins)
Serves 2/3
