Asian Soba Noodles with Peanut Sauce

Soba buckwheat noodles, 12 oz.Mixed vegetables of your choice (I like carrots, green & purple cabbage, & brussels sprouts)Peanut butter, 1/2 cup2 Tbsp. Asian chili sauce1 Tbsp. soy sauce1 Tbsp. rice vinegar1/2 cup water
Boil water in large pot.
Add soba noodles and cook for 5 minutes.
Drain noodles.
While noodles are cooking, saute veggies in dry covered pan over medium-high heat.
In a bowl, whisk together the peanut butter, chili sauce, soy sauce, vinegar, and water.
Combine the noodles, veggies, and peanut sauce in a serving dish.
Serves 8.
