Veggie Omelet

Ingredients
1/2 med. onion, diced1/2 med green pepper,diced4 mushrooms, sliced1 small zucchini squash, sliced thin1 small roma tomato, diced1/2 c Fat Free Cheddar Cheese3 Eggs + 1 Egg White, beaten
Directions
Saute the Vegetables in water just until tender.
Pour beaten egg into 10 " skillet, heated and sprayed with pan spray. Sprinkle on 1/2 of the cheese and top with vegetables. Cover and cook on low heat for 2-3 min.or until egg is just set. Fold into 1/3 rds and sprinkle with remaining cheese. Serve immediately. Serves 2
