Pumpkin Soufflé with Vanilla Cream

Souffle:2 egg whites, or eggbeaters1/2 cup canned pumpkin1/2 tsp pumpkin pie spice2 pkts ideal sweetener, or other sugar substitutedash of saltTopping:1/4 cup 1% lowfat cottage cheese1/4 tsp pure vanilla extract1 pkt ideal sweetener, or other sugar substitute
Thoroughly mix eggs, pumpkin, spice, 2 packets of sweetener, and salt. Pour into a microwavable dish, preferably one that is large enough for the mixture to be about one inch deep. Microwave on high for about 4 1/2 to 5 minutes or until center is dry.
Meanwhile, in a food processor (I use a mini), blend the cottage cheese, vanilla, and 1 packet of sweetener until smooth.
When souffle is done, top with the cream. May be eaten hot or cooled.
