Easy and Savory Broccoli Omelet

Ingredients
2 Eggs2 Tsp Olive Oil2-3 Broccoli Spears, chopped 3-4 Tbsp Greek YogurtDried Cilantro, to taste
Directions
Chop 2 or 3 broccoli spears (with florets) into small pieces. Whisk the eggs together.

Heat 1 tsp olive oil in a small non-stick skillet over medium heat. Add the chopped broccoli and stir for about 15-30 seconds, until slightly tender. Remove from skillet and stir into the beaten eggs.

Heat 1 tsp olive oil in skillet again over medium-high heat, ensuring that it coats the surface thoroughly. Gently pour egg mixture with broccoli into pan. Add a small amount of cilantro as desired.

Allow to cook without stirring for a minute or until bottom sets. Slide a fork or spatula around the edges to separate them from the pan, tilt the pan slightly and carefully fold one half of the mix inward.

Allow to cook for another 20-30 seconds, and then flip the omelet over. Cook for a few more seconds, or until the egg is no longer runny.

Slide the omelet onto a plate and top with greek yogurt. Garnish with additional cilantro if desired. Enjoy!
