Nigerian meat pie

Ingredients
2 cups Flour1/2 lb of Butter 100g Mince beef1 dash of salt1 Egg1 small Potato1 cups of cold water1 tbsp parsley, chopped1 tsp hot chilli
Directions
1-Prepare the filling by browning your meat and spices for about 20mins till its tender. WHile it's cooking, set aside to cool down.
2-Once beef is cooked, add the diced cooked potatoes and heat for 5 minutes. (not too much potatoes). The main purpose is to aborb excesss liquid from the meat mixture, so that you don't end up with soggy meat pies.
3- To make dough: Sift together the flour and cut the butter into the dry ingredients with a fork until mixture is crumbly.
4 -While mixing with a wooden spoon, add cold water at small quantity at a time until dough holds together in a ball (you may need more or less water. Just add small amounts at a time). If the dough is crumbly, add a little more water by drops until the dough stays together when you pinch it.
5 -When dough comes together into a ball roll out the dough until flat.
6- Cut out circles (I use a giant cookie cutter for this). If dough becomes sticky or too soft put in fridge for 10 minutes to cool and then take it out again and continue cutting the circles.
7 -Place meat stuffing in center of pastry circles.
8 -Fold over and seal using a fork.
9 -Brush each pie with the egg yolk.
10- Bake on a lightly greased cookie sheet at 350 degrees for 35 minutes or until lightly browned.

    Though i know how to make this, some people bake with measurements. I would suggest that you put the measurements of ingredients so it makes it easy for beginners. - 2/25/10
