Vegan Carob Icing

Ingredients
1/4 cup carob powder1/4 c rice milk1 tbs cashew butter1 tsp coconut oil1 tablespoon agave nectar (adjust to taste)1/4 tsp vanilla essence/extract
Directions
Whisk together all ingredients except vanilla in a small, heavy pan. Whisking frequently, heat over medium-low heat until icing i smooth and creamy. Remove from heat and whisk in vanilla until it's well-incorporated. Allow to cool and serve spread on cupcakes, cake, bread, or anything else. Makes about 3/4 c icing, which is perfect for one dozen cupcakes.
