Chelle Chicken (Chicken in Red Wine)

Ingredients
Whole chicken, in piecesCajun seasoning, to taste1 tbsp extra virgin olive oil2 tsp minced garlic1 medium red onion chopped 5 sun-dried tomatoes, packed dry, chopped8 Kalamata olives, pitted, chopped 1/4 to 1/2 tsp thyme1 tsp parsley1 cup dry red wine (Cabernet Sauvignon)
Directions
In Dutch oven, heat olive oil on medium heat.
Coat chicken in Cajun spice or salt and pepper.
Brown in Dutch oven for approximately 5 minutes on each side.
Remove chicken and brown onion until clear, then add garlic and sun-dried tomatoes.
Return chicken to pot, add remaining ingredients.
Simmer for at least 25 minutes.
Remove skin from chicken before serving with your choice of pasta.
