Pineapple Chicken Lo Mein

Ingredients
Chunk Pineapple, canned in Unsweetened Pineapple Juice, 2.5 cup (1-20 oz can)boneless, skinless chicken breast, 1 lb.Garlic, 2 cloves mincedGinger, ground, 3/4 tspCarrots, raw, 1 cup, grated Green Peppers (bell peppers), 1/2 cup dicedScallions, raw, 3 medium slicedCornstarch, 1 TbspSoy Sauce, 1/3 cupSpaghetti, cooked (pasta), 4 ozOlive Oil, 1.5 tbsp divided
Directions
Drain pineapple reserving 1/3 cup juice. set pineapple aside. In a large skillet over medium heat, cook the chicken garlic and ginger in 1 Tbsp oil for 6 min. Add the carrots, bell pepper and pineapple. Cover and cook for 2-3 min or until vegetables are crisp-tender and chicken juices run clear. Stir in spaghetti and onions. In a small bowl, combine cornstarch, soy sauce, reserved pineapple juice and remaining oil until smooth. Stir into chicken mixture. Bring to a boil. Cook and stir for 2 min or until thickened.
Serves about 4 maybe more
