Ingredients
1 onion, chopped1 tbsp olive or rice bran oil10 oz frozen mixed veges1/2 cup bean sprouts 6 medium eggs1/2 cup non-fat milk2 oz edam cheese, gratedsalt and pepper
Directions
Heat oil and cook chopped onion until soft but not brown. Pre-cook mixed veges according to instructions (I use the microwave), and add to the pan. Add bean sprouts to pan. Add salt and pepper to taste. Whisk eggs and milk together and add to pan. Turn heat down and cover for 5-10 minutes until eggs set. Sprinkle cheese on top. Place pan under the grill to brown the top. Cut into quarters to serve 4 people.
