Lighter Libby's Pumpkin Pie

Ingredients
1 unbaked 9" pie shell3/4C. Sugar1 TBS Cornstarch1 tsp ground cinnamon1/2 tsp ground ginger1/2 tsp salt2 egg whites1 (15 oz) can 100% Pumpkin1 (12 oz) can FF Evaporated Milk
Directions
Preheat oven to 425F
Combine Sugar Cornstarch ginger & Salt into a small bowl. Beat egg whites lightly in large bowl. Stir in pumpkin & Sugar mixture. Gradually stir in Evaporated milk. Pour into pie shell.
Bake 15 minutes. Reduce temperature to 350 bake and additional 30 - 40 minutes untill knife inserted near center comes out clean Cool on wire rack for 2 hours. Serve immediately or refrigerate. DO NOT FREEZE will seperate from shell.
