Italian style tofu and rice, for two

Ingredients
1 large onion, sliced1 large bell pepper, sliced1 can diced tomatoesone package Uncle Ben's Brown & Wild ready rice, cooked as per directions2 tofu slicesitalian seasoningssalt and pepper, to taste
Directions
Drain your tofu by wrapping in paper towels, while continuing with next steps.

Saute peppers and onions until softened to your liking, Add tomatoes and seasonings and cook until sauce thickens a bit, remove from pan.

Add tofu to hot pan in a single layer. Let one side cook just long enough to start browning and turn. Continue until tofu has cooked and firmed up.

Add vegetables again and rice, and continue cooking until heated through.
