Sweet corn bread

1 c a/p flour1 c cornmeal2/3 c splenda (or like)1 t salt substitute3 1/2 t baking powder1 xl egg1 c skim milk1/3 c vegetable oil1 med/large jalapeno pepper, seeded and chopped fine (optional)
Preheat oven to 400 d. Combine dry ingredients in bowl. Add wet ingredients (with the jalapeno, if desired), mix well. Pour into greased square cast iron pan or glass baking dish. Cook 20-25 min, or until toothpick comes out clean. Makes 9 square servings.
