Vegetarian Mousaka.

Ingredients
1 tsp Olive oil1 large onion1 large/2 medium peppers1 300g bag Quorn minceGarlic, cinnamon, herbsTin of chopped tomatoes1-2 tbps tomato puree1 medium sized aubergine (egg plant)A cup-ish greek yoghurt1 egg30-50g cheese of your choice, grated
Directions
Finely chop the onion and pepper and fry in the oil. Add in quorn.
Put in tinned tomatoes and tomato puree, then add in 2 tsps each of garlic, cinnamon and mixed herbs. Fresh garlic can be used instead - lightly fry with the onion.
Allow this to bubble away for awhile.

Slice aubergine into half centimetre thick slices. Layer these in the bottom of a dish. Cover with above mixture. Put another layer of aubergine on top.

For the topping beat together the egg and the yoghurt. Pour this over the top, spreading evenly. Sprinkle with grated cheese.

Cook on 180 C for 30-40 minutes.
