Creamy Chicken Stew

2 Tbsp Olive Oil1/2 Large Red Onion, chopped1 Tbsp Cumin Seeds2 Tbsp Chili PowderSalt and Pepper3 Cloves Garlic1 can Petite Diced Tomatoes w/ Sweet Onions1 can Red Kidney Beans1 can White Kidney Beans (Cannelloni) 1 Lb Chicken Breasts, cut into bite size 1 Green Pepper, chopped1/4 Cup of Tahini1/4 Sour Cream
1. Saute chopped onion, in olive oil for about 5 minutes. Add cumin seeds, stirring to make sure they do not burn. Add garlic, chili powder and salt and pepper to taste, when you smell the cumin has toasted. Continue to stir for a minute or so.
2. Add canned tomatoes, tahini, and beans, cook for 5-10 minutes.
3. Taste & adjust seasonings. Add green pepper and cut chicken. Simmer for 15-20 more minutes or until chicken is done(the smaller the pieces the faster this will happen).
4. Right before serving add sour cream and mix in quickly. Lower temp to very light simmer and cook about 5 more minutes stirring until all flavors are mingled.
Makes about 9- 1 cup servings
