Gluten Free Sun Dried Tomato and Feta Turkey Meatloaf

.5 c gluten free bread crumbs.5 c canned spinach.25c marinated sun dried tomatoes, chopped2 cloves minced garlic2 eggs lightly beaten2 TBS skim milk.5 c feta cheese crumbled1.5 tsp Celtic sea salt1.25 tsp black pepper6 oz no salt added tomato sauce
1. preheat oven to 375
2. grease muffin pan
3. in a large bowl combine bread crumbs, spinach, tomatoes, galic, eggs, milk, cheese, salt and pepper.
4. add the ground turkey and work mixture until blended but do not over mix.
5. Divide meatloaf mixture into muffin cups and place muffin tins on another rack to catch juices.
6. Bake for 30-35 minutes or until temp reaches 180, let rest for 5 minutes out of the oven.
