Thai Style Chicken Thighs - SC

1 tsp ground ginger1/2 tsp salt1/4 tsp ground red pepper6 Chicken Thighs, skin removedOnions, raw, 1 medium Garlic, 3 clove1/3 cup coconut milk low fat1/4 cup Peanut Butter, smooth style2 tbsp Kikkoman Soy Sauce1 tbsp Cornstarch2 tbsp water
Combine ginger salt and pepper. Sprinkle over meaty side of thighs.
Place onion and garlic in sc. Top with chicken. Whisk together remaining ingredients, except water and cornstarch. Cook on low 6 to 7 hours or high 3 to 4 hours.
Remove chicken to serving bowl. Cover. Turn sc to high. Combine cornstarch and water. Stir into sc. Cover and cook 15 minutes until thickened. Spoon over chicken. Serve over couscous or rice. Top w cilantro and garnish w lime wedges.
