Whole Wheat Zucchini Bread Muffins!

Ingredients
3 cups grated zucchini (try not to grate your fingers!)1 cup sugar1 cup unsweeted applesauce (organic)1 tsp vanilla5 egg whites2 cups whole wheat flour2 tbsp of cinnamon1 tsp baking soda1 tsp salt1/2 tsp baking powder1/4 tsp ground nutmeg
Directions
Pre-Heat oven to 325F.

Grate the zucchini (careful of the fingers) and place in a large mixing bowl. Add sugar, applesauce, vanilla and egg whites. Stir together until they are well mixed.

Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg in a bowl. Slowly mix in with zucchini mixture. It will be a very wet mixture.

Place muffin liners in the muffin tin and then spoon in the batter so the muffins are pretty even.

Bake for about 35-45 minutes. Enjoy!

    FABULOUS! I love any type of clean eating/health recipe. I subbed 1/2 cup sugar for stevia extract. Also, I replaced 5 egg whites for 2TBSP ground flax + 6 TBSP egg whites. I made 10 muffins and 1 loaf with the recipe, sprinkling the loaf with some walnut pieces and truvia. Regret - 1 not 2 batches! - 7/30/13
