Ingredients
1 Box Goya Mexican Rice, prepared3 boneless, skinless chicken breasts, cubed1 jar picante sauce1 cup shredded mexican cheeseCumin, to tasteCorriander, to tasteSalt & Pepper, to taste
Directions
Preheat oven to 350 degrees. Spread the prepared rice in a 9X13 baking pan. Saute' chicken in extra virgin olive oil. When done, add 1/2 jar picante sauce. Heat through and spread over rice in pan. Pour on the remaining picante sauce. Sprinkle the shredded cheese over the top and bake for 30 minutes,
