Slow Cooker Ginger Pork Wraps

Ingredients
1/4 cup Hoisin Sauce3 Tbsp Gingerroot, grated3 tbsp Liquid Honey1 boneless Pork Loin Rib End (approx 2 1/2 lbs), trimmed of excess fat2 1/2 cups Cabbage, shredded1/2 cup Carrot, shredded3 Green Onions, finely chopped2 Tbsp Rice Vinegar12 - 10" Flour TortillasDirections:1. In a bowl, combine hoisin sauce, ginger and honey.2. Place pork roast in (3 1/2 - 6 qt) slow cooker stoneware and brush with sauce to coat completely.3. Cover and cook on Low for 8 - 10 hours or on High for 4 - 5 hours, until meat is very tender.4. Transfer pork to a bowl and, using 2 forks, pull meat into shreds. Skim fat from sauce. return meat to slow cooker.5. In a bowl, combine cabbage, carrot, green onions and vinegar.6. Wrap tortillas in foil and heat in a preheated 350 degree Celcius oven for 10 mins.7. To serve, spread approx 1/3 cup pork mixture down center of a wrap and top with 1/4 cup of cabbage mixture. Roll up each tortilla tightly.8. A nice salad or rice would accompany it well.
