3 cups sugar3 cups flour1 cup canola oil3 eggs, slightly beaten1 large (29 oz) or 2 small (15 oz) cans of pumpkin pie mix ***I usually use the smaller cans. That extra ounce of pumpkin makes all the difference.1 tsp ground cinnamon1 tsp ground nutmeg1/2 tsp salt1/2 tsp baking powder1 tsp baking soda
Mix all ingredients together. Bake at 350 degrees for 20 minutes.
I top mine with just a squirt of cream cheese icing, but it isn't necessary.
